Fridge Leftover Pasta!
I needed some dinner on Saturday night and I didn’t feel like going grocery shopping so I whipped up some pasta with whatever was in the fridge. Well in case you couldn’t tell from the pictures it turned out great and hit the spot! I sauteed some zucchini, portebellos, and tomatoes, let those cook down and added some pine nuts and deglazed the pan with some Rosso Di Monteplacino (sp?) that Jamie had left me to to try! Sooooo good. Boiled up some ziti, chopped up some fresh basil from my plants on the sill, sprinkled a little Parmesan on top, and poured a glass of the wine. Mangia Mangia! Buon Appetito!
